Initial fermentation stage with maceration in stainless steel tanks at controlled temperature for 15 days.
Tasting notes
Deep ruby red in colour, with a full-bodied and complex structure. The bouquet reveals a distinctive Mediterranean character, where ripe black cherry and blackberry notes blend harmoniously with hints of coffee, carob and sweet tobacco. Delicate nuances of black olive and thyme further enrich the aromatic profile. On the palate it is full, smooth and elegant, supported by vibrant freshness and soft, well-integrated tannins. Well balanced between warmth and structure, it is intense yet remarkably easy to drink.
Food pairing
Ideal with traditional Apulian “bombette”, meat dishes with tomato sauce, roasts and eggplant parmigiana.
