Territory: all vineyards are cultivated in the Salento wine producing area.
Alcohol content: 12,5% by vol.
Fermentation and wine-making notes: initial stage of fermentation into inox steele tanks at thermocontrolled temperature, afterwards the must is put in barriques where it finishes the fermentation process.
Ageing: the complex structure of this white wine allows a long storage throughout years.
Features: straw yellow color with fleeting hints of greeny. Intense Bouquet, and pleasantly frutiy with light notes of cedar, tropical fruits, melon and ripe apricots. At the palate smooth, dense and persistent, with a delicate touch of vanilla in the end.
Recommendation: It matches perfectly with salty fishbased recipes, white meats and several types of cheeses.
